         La prestation comprend :- l"élaboration des repas : hors d"oeuvre, plat protidique, accompagnement avec légumes + féculents, fromage en portion individuelle, dessert ;- l"approvisionnement en denrées : sel, poivre, mayonnaise, moutarde, ketchup ;- La fabrication des repas classiques, à thèmes et festifs en conformité avec les prescriptions qualitatives et nutritionnelles définies par l"EHPAD PIERRE MENDES France ;- Le conditionnement des plats cuisinés et des préparations froides ; - Le transport et la livraison des denrées ou des repas sur site ; - Le respect des contrôles de l"hygiène, notamment la réalisation à ses frais, des contrôles microbiologiques prévus par la règlementation en vigueur ; - La mise à disposition de personnel pour assurer la livraison des repas du service de portage de repas à domicile (la mise à disposition du véhicule et les frais associés étant à la charge du pouvoir adjudicateur) ;- la fourniture de repas de substitution correspondant aux besoins pour 3 jours (déjeuners et diners).Les variantes sont refusées.
