" Resistant and durable joinery.
" Able to withstand heat and weight of steak cuts. Provide load and heat resistance test results.
Cutlery:
" Stainless steel knife and fork made from food grade 304 stainless steel or higher.
" Able to withstand corrosion, dishwasher safe and food safe.
" Minimum blade thickness of 4cr14.
General requirements:
" All materials must be FDA compliant and NSF certified for food contact.
" Provide ASTM certificate for cutlery grade stainless steel.
" Provide treatment and specifications for wood treatment against fungi and organisms.
" Provide FDA certificate of compliance 21 CFR 178.3800 for wood materials.
" Cutlery must be sharpened and maintain edge for a long time. Provide sharpening test results.
